Pumpkin Cake Batter Ice Cream

Of course, another pumpkin dessert. I'm sorry guys, I just can't help it. It's still kind of warm, but time for fall, so what suites this weather better than pumpkin ice cream? I started off with a basic cake batter ice cream recipe, added pumpkin, and tweaked some other ingredients too. This ice cream ended up being really light and fluffy and the cake batter flavor isn't super strong or overpowering. Everybody loved it at the soup party! AND, this goes perfect with the Caramel Apple Cake: http://kysweettoothsisters.blogspot.com/2011/09/caramel-apple-cake.html
Here's what you'll need for the ice cream
Milk, heavy cream, sugar, vanilla, yellow cake mix, pumpkin, nutmeg, and cinnamon. In a large mixing bowl, combine milk and sugar
Whisk until sugar is dissolved. Add spices, pumpkin, and heavy cream
Mix together until well combined. Then whisk in the cake mix and vanilla
Pour finished mixture into the ice cream maker
Prepare ice cream as the ice cream maker directs
Scoop ice cream into bowls and serve

Mint Chocolate Craze!

Hello all of my lovely bloggers! It has been a long time since I (Rachel) have posted anything, my apologies. This past Saturday was National Mint Chocolate Day! Mint Chocolate has always been one of my most favorite flavors because it is so delicious and refreshing, and for some reason I can justify that it is not that bad for me because it is mint :) Casey and I were reunited this weekend because she came to visit me at school! So of course we had to make something together. We decided to make a mint chocolate ice cream dessert, because who doesn't love ice cream? Let me just say that we made this dessert late Saturday night, and it is Monday night and the dessert no longer exists!!! Here is what you need for this vanishing, refreshing, mint-chocolatey goodness:
Oreos, butter (which we forgot to put in the picture), mint chocolate chip ice cream, cool whip, thin mints, semi-sweet chocolate chips, and andes baking mints. First, melt your butter
Pour into some crushed oreos and combine well
Press into a 9x13 pan. Freeze while making the ice cream layer
Put the mint chocolate chip ice cream in a large bowl
Whip up until fluffy and smooth
Add in about half of the cool whip and mix well
Crush some oreos and thin mints
Add to the ice cream mixture and gently fold in
Pour over the frozen oreo crust
Spread out evenly and let harden in the freezer about 15 minutes
Add leftover chopped oreos to the left over cool whip
Dollop on top of the ice cream layer and spread out
In a small bowl, melt chocolate chips and andes baking pieces until smooth
Drizzle over the cool whip layer
Freeze until completely hard, then serve
Normally, we would get a picture of a piece of the dessert.. BUT, it was gone before we got the chance. We didn't really have a recipe for this, so we'll do the best we can for yall!

Mint Chocolate Ice Cream Dessert

1 pkg. Oreos
1/2 stick butter, melted
1/2 gallon mint chocolate chip ice cream
8 oz cool whip, soft
1 roll thin mint cookies, chopped
1 cup semi-sweet chocolate chips, melted
1 cup andes mint baking chips, melted

Crush 28 oreos pretty fine and combine with the melted butter. Press into the bottom of a 9x13 pan. Freeze while making the ice cream layer. In a large bowl, beat the mint chocolate chip ice cream. Add half of the cool whip and whip until fluffy. Fold in the crushed roll of thin mint cookies and 8 chopped oreos. Pour and spread out evenly over the oreo crust. Freeze about 15 minutes, or until not runny on the top. In a small bowl, combine the remaining cool whip and the remaining (about 5) chopped oreos. Spread over the hardened ice cream layer. In a small microwavable bowl, melt together the semi-sweet chips and andes baking pieces. Stir and melt until smooth. Drizzle over the cool whip layer. Cover and place in the freezer until completely hard. Serve after the ice cream has hardened. Enjoy!

We All Scream For Ice Cream!

There is something about ice cream, I (Casey) don't know what it is, but I crave it 24/7. Luckily, I have my best friend, Meredith to pig out on it with me. There is snow on the ground and we will still do anything to have some birthday cake ice cream. A couple of days ago, we made a trip to Brusters, and there was NO birthday cake. It was very dissapointing. Mer and I just would not take no for an answer, so I decided to make some to fufill our craving! Here's what you need for the base ice cream
Sugar, whole milk, vanilla, heavy whipping cream, yellow cake mix, and ice cream salt. Whisk together milk and sugar until sugar dissolves
Whisk in vanilla and heavy whipping cream until well combined
Now whisk in the cake mix, making sure there are no lumps
Put it in your ice cream maker and let it do it's thing (this part is what the rock salt is for)
After 40 minutes, I got this
I couldn't decide what mix-ins I wanted in my cake batter ice cream, so I split it in half and did two different combinations; Birthday Cake (cake batter ice cream with frosting and sprinkles) and Oreos and Cookie Dough (I mean exactly what I said, cake batter ice with chopped oreos and eggless cookie dough) First, I put together the oreos and cookie dough combination
Split the ice cream into two seperate containers. Chop your oreos and cookie dough into bite size pieces, pour on top of one of the containers filled with ice cream. Gently fold in
Sprinkle more on top
Put that in the freezer and keep in there until hardened, or ready to eat. Here it is after it has completely frozen
Scoop into a bowl and eat up!
Now for the Birthday Cake ice cream! You'll need to prepare your frosting. I use wilton buttercream for this. You will need butter, shortening, vanilla, powdered sugar, milk, and food coloring (I used blue, but you can use any color you want)!
Beat together butter, shortening, and vanilla
Add milk and powdered sugar until well combined. Mix in the milk and food coloring.
Now your ready to assemble your birthday cake ice cream
Spred out a thick layer of ice cream in a container. Dollop some frosting in random places, top with sprinkles
Repeat until you run out of ice cream (you will probably have left over frosting). Let that chill in the freezer until hard. Finished product...
I gotta say it.. Get in my belly.
-I feel like this post is confusing, I'm sorry, I did the best I could! Let us know if you have any questions!

Cake Batter Ice Cream

1 cup whole milk
3/4 cup sugar
2 cups heavy cream
1 1/4 tsp. vanilla extract
2/3 cup yellow cake mix

In a medium size bowl, whisk together milk and sugar until sugar dissolves. Add heavy cream and vanilla, mix well. Whisk in the cake mix, making sure there are no lumps. Pour into your ice cream maker, follow the directions your ice cream maker gives you.

For Oreo & Cookie Dough:
-Oreo's, chopped into bite size pieces
-1 recipe eggless cookie dough, cut into bite size pieces
Put Oreo's and eggless cookie dough in your finished ice cream. Gently fold in. Sprinkle more Oreo's and cookie dough on top. Freeze until completely hard, or ready to eat.

For Birthday Cake:
-1 recipe Wilton buttercream frosting(I usually make half a recipe and have plenty)
-Colorful Sprinkles
Spread out a layer of finished ice cream. Dollop bite size pieces of frosting on top. Top with sprinkles. Repeat; ice cream, frosting, sprinkles. Do that until you run out of ice cream. Freeze until completely hard or ready to eat.
