Poppyseed Chicken

I/we apologize for the delayed posts recently. Both sweet toother's have been out of town for a while now, but we are doing as best as we can! So bare with us :) I decided to make poppyseed just because I was craving it. Poppyseed chicken is one of my favorite meals. It's easy, quick, delicious, and fattening.. whats not to like?  This recipe is a little different than some of the usual poppyseed chicken recipes, but it's my new go-to poppyseed chicken. Here's what you'll need
Chicken, sour cream, cream cheese, cream of chicken soup, poppyseed's, butter, and ritz crackers. Place chicken breasts in a large pot and fill with water until all the chicken breasts are covered. Bring to a boil; cook about 10 minutes. (Your chicken may need more or less time depending on the size) Also, I added a little oil to the chicken and water before cooking just to keep the chicken from sticking
Once the chicken is cooked, drain and let cool. Once chicken has reached room temp, cut into cubes or shred
Set in a bowl and set aside. In a separate bowl, combine cream cheese, cream of chicken soup, poppyseeds, and sour cream
Stir together until well combined; add chicken
Spread into a 13x9 casserole dish
Top with one roll of crushed ritz crackers
Sprinkle with poppy seeds 
Pour melted butter over that
Bake about 30 minutes, or until crackers become golden. Serve warm 

Poppy Seed Chicken

6 chicken breasts, boiled and cubed
8 oz. sour cream
1 can cream of chicken soup
4 oz. cream cheese, soft
2 tsp. poppyseed's
1 roll ritz crackers, crushed
1 stick butter, melted

Preheat oven to 350 degrees. Boil chicken in a pot with a little oil and salt until cooked through. About 10 minutes (once boiling), depending on the size of the chicken breasts. Just make sure there is no pink or clear in the chicken when you cut into it, that means it is not cooked. Once chicken is done, let sit about 10 minutes. Chop semi-cooled chicken into cubes, set in a large bowl and set aside for now. In a separate bowl, combine sour cream, cream of chicken soup, cream cheese, and poppy seeds. Once well combined, add the cubed chicken and stir until fully coated. Spread into a 9x13 casserole dish. Sprinkle on the crushed crackers and poppy seeds. Pour melted butter over that evenly and bake for 30-40 minutes, or until warm and bubbly.

Chili Day

Growing up I had never tried or really even heard of white chili. The only chili we had was regular red chili. About a year ago, I discovered white chili and I fell in love. I fall in love with a lot of foods, but they usually involve sugar, so this was rare for me. Call me weird, but the forst thing I did after that potluck was look up recipes for white chili. I saw a yummy looking one, and went for it with some changes, it was perfect! So here's what you need for white chili
Onion, chicken, northern beans, green chilies, chicken broth, cumin, salt, garlic powder, oregano, and sour cream. Saute chicken and onion in a large skillet
Cook until onions are almost cooked through; set aside
In a large pot, combine beans, green chilies, chicken broth, cumin, salt, garlic powder, and oregano
Bring to a boil, then add the chicken mixture into the pot
Stir together, cover, and simmer for 30 minutes. Turn off the heat and add the sour cream
Combine until the chili turns white

Let sit about 5 minutes. Scoop into bowls and serve with shredded monterey jack cheese on top!

Creamy White Chili
1 rotissere chicken or 3 chicken breast, cubed
1 onion
1 (14 oz.) can chicken broth
2 (15-1/2 oz.) cans Great Northern beans, drained and rinsed
2 (4 oz.) cans chopped green chilies
1-1/2 t. garlic powder
1 t. salt
1 t. ground cumin
1/2 t. dried oregano
1/2- 1 cup sour cream
shredded Monterey Jack cheese (optional)

In a large skillet, saute chicken and onion in oil. Cook until chicken is cooked through or onion is almost cooked through. Remove from heat and set aside. In a large pot, combine beans, broth, chilies, garlic powder, salt, cumin, and oregano. Bring to a boil, then add in the chicken and onion mixture. Cover and simmer for 30 minutes. Remove from heat, stir in sour cream 1/2 cup at a time (you may not need all of the sour cream). Let sit for 5 minutes. Serve with shredded cheese on top!

Pizza Day!

I (Casey) decided to make a "healthy" version of pizza! So.. I made a whole wheat crust. It was good, but I perfer just a regular white crust. If you're feeling healthy, here's what you need for the wheat crust
water, yeast, honey, wheat flour, and olive oil. In a small bowl, combine water, yeast, and honey
set that mixture aside. Put 2 cups of the flour in a food processor. Place the lid on the processor and turn on. Slowly pour the yeast mixture into the top of the food processor while running
excuse all of the background junk.. I was too lazy to move it. Let that run about 30 seconds and you should get this
add the remaining flour to the dough (i used all purpose for the remaining flour) and pulse until just combined. Pour some olive oil in a bowl, and roll your dough ball in the oil until completely covered, adding more oil if needed
cover with a damp towel and place in a warm area (I put mine in my oven that was turned off). Let the crust rise for an hour, or until it gets to about this size
press the air out of the dough and split into two. Roll each crust out, forming thicker edges as the crust
I couldn't make up my mind, so I made two different kinds of pizzas. Now, the toppings are up to you, but first I made a sausage, onion, & pepper pizza with marinara sauce. This is what I used for this pizza
mozzarella cheese, cheddar cheese, marinara sauce, italian sausage, and bell peppers. Place the crust on a pizza stone or cookie sheet and start preparing your pizza. Spread some marinara sauce on your crust
then sprinkle with a generous amount of both cheeses

bake until desired doneness.. is that gramatically correct? Anyways, here's the finished pizza

now for the other pizza. I made this one a pesto, sundried tomato, & basil pizza. Here's what you'll need for this one
mozzarella cheese, pesto, sundried tomatoes, and basil. Place the other pizza dough on a cookie sheet and spread pesto around the crust
sprinkle the mozzarella cheese evenly over the pesto (I also added some shredded parmesan cheese)

These were both super yummy and I couldn't decide which one I liked better. I thought the pesto pizza would be even better with some sliced and grilled chicken on top.

Whole Wheat Pizza Dough
3/4 cup warm water
2 1/4 tsp. yeast
2 tsp. honey
2 1/4 cup whole wheat flour
*desired toppings

In a small bowl, stir together the first 3 ingredients; let sit for about 5 minutes. Place 2 cups of flour in the food processor. Turn on and slowly pour in the yeast mixture. Let run about 25-30 seconds. Now add the remaining flour and pulse just until combined. Pour olive oil in a bowl and roll dough ball in the oil until completely covered. Cover with a thin, damp towel. Let sit in a warm place for an hour. Punch down the dough and split into two. Roll each ball out until desired thickness, leaving the outsides thicker for the crust. Place each pizza dough on a cookie sheet or pizza stone. Cover with desired toppings and bake at 500 degress for 10-15 minutes. Cool, slice, and eat!
