Chewy Sugar Cookies

Honestly, I (Casey) am not the biggest sugar cookie fan. I would choose a chocolate chip cookie over a sugar cookie any day. After making this sugar cookie recipe, I realized the reason I wasn't a fan was because I had never had a GOOD sugar cookie. So all you non-sugar cookie loving fans, make these and you'll change your mind.

You are going to need butter, sugar, vanilla, eggs, flour, salt, and baking soda
Beat butter and sugar a couple of minutes
Add eggs and vanilla
Beat in well and add all the dry ingredients. Mix that up until just combined
Roll finished dough into a ball and refrigerate
Pull it out of the fridge, scoop into balls and dip the top half of the dough ball in sugar
Bake and take out of the oven while they are still a little gooey (so they won't get hard). About like this..
Let them cool on the pan about a minute, then cool completely on a wire wrack or wax paper. They will probably flatten out a little while they are cooling. Here's the inside of the cookie

Best Sugar Cookies

2 sticks unsalted butter, salt
2 cups sugar + 2 Tbs.
2 tsp. vanilla
2 eggs
3 1/2 cups AP flour
2 tsp. baking soda
1 tsp. salt

In a large mixing bowl, beat together butter and 2 cups sugar about 2 minutes, or until fluffy. Add in vanilla and eggs, mixing well. Hand mix in the flour, baking soda, and salt until just combined. Roll dough into a ball and refrigerate at least 3 hours. When you are ready to make the cookies, preheat oven to 350 degrees and line a baking sheet with parchment paper. Pull dough out of fridge and scoop into balls. Dip the top of the dough balls into the extra(2 Tbs.) sugar. Set on the pan about 2 inches apart. Bake 6-8 minutes. Let cool on pan about 1 minute, then cool completely on a wire wrack or wax paper/foil. Store in an air-tight container up to 3 days.
